What you on about, he seened "nutty" because he was straving, stucking a house, with no food, on his own... and there were thousands of ZOMBIES trying to kill him outside. The video shows him go mad with hunger, he seemed relitiv clam and collected just as he died, eating something. This does not mean he would have a cashe of ration packs in his basment, like a crazy survilist or burt from tremors.
